    • Next 36 hours, raise +5 F every 12 hours … hold ambient-freezer between 65-68 F
    • Remaining fermentation @ 65-68 F … FG 1.009 specific gravity (ETA 7 days)
  • Lagering
    • Next 4 days, lower -5 F every 12 hours … hold ambient-freezer at 30-32 F
      • Add gelatin at 50 F
    • Hold at 32 F for 5 days … this is clarity phase
    • Move over to kegs … mature for 5 days to 14 days
